Water spinach, also known as Kankun, is one of the simplest and quickest vegetables you can turn into a delicious stir-fry. Its tender leaves and lightly crunchy stems absorb flavors beautifully, making it a perfect choice for a light, healthy, and satisfying meal. This recipe is especially ideal for busy days when you want to prepare something nutritious with minimal effort and basic ingredients.


Ingredients...
Water spinach 250g.
1 Onion.
About 2 cloves of garlic.
Two green chilli pods.
1/2 Teaspoon of mustard seed.
1/2 teaspoon of turmeric powder.
Salt as needed.
1 1/2 Teaspoon of coconut oil.
2 Teaspoon of crushed chili powder.

The order of preparation.
Step 1:-
First, wash and clean the water spinach thoroughly, then break it into small pieces. At the same time, finely slice the onion, garlic, and green chilies.

Step 2:-
Next, take a slightly large pan, add some coconut oil, and place it on the stove. Once the oil is heated, add a few mustard seeds. Then add the sliced onion, garlic, and green chilies, and mix well.

Step 3:-
Now add a little turmeric powder and salt, and mix everything again.

Step 4:-
Now add the broken pieces of water spinach and mix for about a minute.

Step 5:-
Now add a little crushed chili powder and mix well. Remove it from the stove immediately. You should take it off the heat quickly to keep its bright green color from changing.

Once this stir-fry is complete, the vibrant color and fresh aroma of the water spinach add a delightful touch to any meal. This simple and delicious dish pairs wonderfully with warm rice and brings a bright, home-style flavor to your table. It’s a quick, healthy recipe that everyone can enjoy.
