It’s none other than crispy mung bean fritters! Mung beans are known to be a highly nutritious legume. They are rich in protein, vitamins, and minerals, making them an excellent addition to your diet. These fritters are not just tasty but also incredibly nutritious, making them a perfect snack for tea time, parties, or even a light evening treat. Whether paired with sambol or enjoyed on their own, mung bean fritters are a versatile and flavorful recipe suitable for all age groups, from kids to adults. So, let’s see step by step how to prepare this delightful dish.

Materials Used.

Mung bean - 100 gms (washed and fermented for 7-8 hours before).
Salt - to taste.
1 tablespoon of crushed garlic and ginger.
1 Teasppon of Roasted cumin seeds
Curry leaves.
Coconut oil for frying.
A washed and cleaned onion.

The cooking process as follows.

Now, let's first finely chop the onions, green chilies, and curry leaves.

Next, take a mortar and pestle, add the roasted cumin seeds and the soaked mung beans, and grind them well. If you prefer, you can use a blender to accomplish this step.

Now, take the finely ground mung bean mixture and combine it with fried ginger, shallots, onions, curry leaves, and a pinch of salt. Mix everything thoroughly until well blended.

Next, take a pan and add some coconut oil. Place it on the stove and heat until the oil is hot. Once the oil is ready, take small portions of the prepared mixture, shape them into thin patties resembling vadai, and carefully place them into the hot oil. Fry until they turn a golden brown color.
