How are you doing? We should always be mindful of our health in our daily lives. For this reason, I try to minimize the use of artificial ingredients in my cooking. Improving our health requires us to focus on providing our bodies with the necessary nutrients. Today, I’m excited to share a simple yet delicious dessert recipe with you—Pudding made with Coconut Milk. This pudding can be prepared with just a few basic ingredients readily available at home. As a dessert, it’s incredibly flavorful and sure to be enjoyed by everyone. Let’s take a step-by-step look at how to prepare this delightful dish! 😊
Materials Used.
Crushed jaggery 100g.
Thickened coconut milk 650ml.
4 Tablespoon of sugar.
2 Tablespoon of custard powder.
2 Tablespoon of Corn flour.
2 Tablespoon of Chopped peanuts.
Crushed cardamom.
Method of making....
First, take a bowl and add approximately 400ml of coconut milk. To this, add cornflour and sugar, and mix everything thoroughly until well combined. Make sure there are no lumps, and the mixture is smooth and even. This will be the base for your pudding.
Next, take a saucepan and place it on the stove. Pour the prepared coconut milk mixture into the pan. Cook the mixture over low heat, stirring continuously to avoid lumps or burning. Keep stirring gently until the mixture thickens to a pudding-like consistency.
As the mixture begins to thicken, add the required amount of salt, Crushed cardamom, and toasted cashew nuts. Keep stirring for a few more minutes until the mixture is well-combined and aromatic.
While the mixture is thickening, prepare the cups by lightly greasing them with coconut oil. Once the mixture has reached the desired consistency, immediately pour it into the prepared cups. Smooth the surface if needed and ensure an even distribution. When pouring the mixture into the prepared cups, make sure not to fill them completely.
Take the remaining coconut milk and add about 2 tablespoons of custard powder. Mix well until it dissolves completely, creating a smooth, lump-free consistency. Set this mixture aside for later use.
Place a pot on the stove and add the grated jaggery. Allow the jaggery to melt, adding approximately 3 tablespoons of water to help it dissolve. Stir well to create a smooth syrup. Once the jaggery has completely melted, add the custard powder mixture prepared earlier and stir continuously. Allow the mixture to cook until it begins to thicken and bubble gently. Add a pinch of salt, along with the Crushed cardamom and cashew nuts, and mix thoroughly. Let it cook for a short while before removing the pot from the heat.
Take the cups prepared with the earlier mixture and pour the jaggery mixture gently on top, creating an even layer over the base. Allow the assembled pudding cups to cool at room temperature. Once cooled, place the cups in the refrigerator and let them set for a few hours. After chilling, the pudding will be firm and ready to serve.
This delicious and nutritious dessert is now ready to enjoy. Made with coconut milk, it is a perfect vegetarian-friendly treat. I hope you’ll try this recipe and share the joy of preparing it in your own kitchen.
