Dear friends, wishing all of you a wonderful day! How are you doing? Today, I am excited to share with you an amazing vegetarian breadfruit curry recipe and how to prepare it step by step. This curry is incredibly flavorful and holds a special place in Sri Lankan cuisine. In Sri Lanka, breadfruit curry is often made with Gotukola or other leafy greens. Since breadfruit is considered a warming food for the body, these greens help balance the dish while enhancing its nutritional value. Breadfruit is rich in vitamin C and starch, making this curry not only delicious but also nutritious. Let’s dive into the process of preparing this delightful and wholesome curry!
Materials Used.
1 Medium-sized breadfruit.
A chopped tomato.
A pinch of tamarind.
3 Teaspoon of Roasted curry powder.
1/2 Teaspoon of pepper powder.
1/2 Teaspoon of turmeric powder.
1 1/2 Cup of coconut milk.
4 Tablespoon of hot water.
A few chopped spinach leaves.
1 Teaspoon of sugar.
Salt as needed.
Coconut oil for frying.
1 Teaspoon Crushed garlic, ginger paste.
1 chopped green chili pod.
Curry leaves.
Method of making....
First, Prepare Tamarind Paste. Before making the curry, you need to prepare a tamarind paste. Take a small cup and add some tamarind to it. Add a teaspoon of sugar and approximately 4 tablespoons of hot water. Mix well until the tamarind dissolves and forms a paste. Remove any tamarind seeds from the mixture. Set the tamarind paste aside for later use.
Next, Prepare the Breadfruit Take the breadfruit and remove its skin carefully. Cut it into small, evenly-sized pieces to ensure even cooking. Set the pieces aside for the next step.
Add a pinch of salt and a teaspoon of pepper powder to the breadfruit pieces. Mix well to coat the pieces evenly with the seasoning. This step helps enhance the flavor of the breadfruit before cooking.
Next place a pan on the stove and add approximately 4 tablespoons of coconut oil. Once the oil is heated, add the seasoned breadfruit pieces to the pan. Sauté and cook for about 10 minutes, stirring occasionally to ensure even cooking and prevent sticking. The breadfruit pieces should begin to soften and develop a light golden color.
Take another pan and place it on the stove. Add about 2 tablespoons of coconut oil. Once the oil is heated, add the following ingredients one by one: Finely chopped garlic and ginger paste, Chopped onions, Curry leaves, Chopped green chilies
Sauté the mixture well until the onions become translucent and the spices release their aroma. Mix thoroughly to combine all the flavors.
Next, to the sautéed mixture, add the following ingredients. Salt powder (to taste), Turmeric powder, Roasted curry powder, Chopped, tomatoes, Prepared tamarind juice ,Mix everything thoroughly, ensuring that the spices coat the mixture evenly. Allow it to cook for a few minutes until the tomatoes soften and the flavors are well combined.
Next, pour the coconut milk into the mixture and stir well to combine all the ingredients evenly. Let it simmer gently for about 3 minutes, allowing the flavors to blend together. After 3 minutes, remove the curry from the heat and transfer it to a serving dish.
Next, take the same pan and add one tablespoon of coconut oil. Heat the oil until it becomes aromatic, then add the chopped tomatoes and a pinch of salt. Mix thoroughly, allowing the tomatoes to soften slightly. Now, add the pre-cooked breadfruit pieces to the pan along with the previously prepared spice mixture. Stir everything together to coat the breadfruit evenly with the spices. Let it simmer for a few minutes, allowing the flavors to meld together.
Finally, add the chopped spinach leaves and cook for about a minute and remove from the heat.
Now, this delicious and nutritious breadfruit curry is ready. The aroma is truly delightful! I hope you all try preparing it this way as well.
