Vegan Pina Colada ice-cream (3 ingredients) 🍨✨

Maybe Pina Colada is a strong word for this recipe but this ice-cream made from pineapple, banana and coconut milk can be a really great addition to some summer party and replace Pina Colada's. 😅

There is plenty of different variations for vegan ice cream made out of frozen banana. Or "nice cream" as they are called 😀
For these recipes usually you just need to blend some frozen banana (and that can already be a healthy and tasty ice-cream alternative) or add other frozen fruit, berries, etc. The possibilities are limitless here 🙈

For these vegan ice-cream you should have a blender. I use hand blender as it is most convenient for me but any different food processor works as well.

For the "Pina Colada" ice-cream you will need:

  • 320 grams of fresh pineapple (or you can buy already frozen one)
  • 1 ripe banana, medium size (also can be baught already frozen)
  • 120 ml. coconut milk (solid part from the top of a can)*

*Use the coconut milk which is full fat and leave the can in the fridge for a few hours (or best - overnight) before opening it so that you get that solid consistency on the top when you open the can.

Preparation:

  1. If you are using fresh fruit - cut the pineapple into cubes, the banana into slices and freeze in advance in the freezer. Keep in the freezer for at least a few hours or even better - overnight.

  2. Place the frozen banana and pineapple and coconut milk in a bowl where you will blend the ice cream. This would require a hand blender or food processor.
    It is best to use solid coconut cream from the top of the coconut milk can as you can see below:

    Also, feel free to dismiss the coconut milk here if you don't have it - the ice-cream will be just as tasty. Or add some shredded coconut for the flavour.

  3. Blend all the ingredients until smooth.

  4. The ice cream can be eaten immediately or kept in the freezer for 20-30 minutes to harden more.

  5. If storing in the freezer for a longer period of time (for example, overnight), let it sit at room temperature for 20-30 minutes after removing to soften it a bit.

It is so quick, simple and yet tasty! Especially in the summer time ☀️
