You will need:
For 1-2 servings
● 300 g. fresh watermelon (already removed peel)
● 1 small fresh cucumber (approx. 100 g.)
● 30 g. arugula (approx. 1 handful)
● 50 g. vegan feta cheese
● ¼ small red onion
● 1 tablespoon chopped fresh mint leaves
For the dressing
● 15 ml. olive oil
● 10 ml. balsamic vinegar
● 5 ml. fresh lemon juice
● ¼ teaspoon salt
● ¼ teaspoon ground pepper
Preparation
1.Cut the watermelon and cucumber into cubes.
2.Thinly slice the red onion.
3.Chop the fresh mint leaves.
4.Crumble the vegetable feta cheese.
5.In a large bowl, combine the watermelon, cucumber, arugula(which can also be chopped a little), red onion and chopped mint.
6.Prepare the dressing by mixing well the olive oil, balsamic vinegar, lemon juice, salt and pepper.
7.Drizzle the dressing over the salad and toss gently.
8.Top with crumbled feta cheese.
