I found this recipe on my social media homepage a while ago, and I've been wanting to prepare this for a long time. Because I was so busy shopping at the market, I always forgot to buy long beans. It was a coincidence that yesterday my mom went to the market and I left 1 bunch of long beans to cook this dish.
Jukut Bejek long beans
I'm not sure why this dish is called jukut bejek, but jukut means vegetable, while bejek means mashed. But for the original history of this dish I don't know enough, which is clearly processed this dish is one of the traditional Balinese foods. Which is usually used as a dish of side dishes enjoyed with Balinese mixed rice.
Processed from long beans that are boiled then split and then sauteed fragrant with spices that are originally Balinese are usually served with sambal embe as a complement to this dish. However, I did not prepare sambal embe, only sprinkled fried onions on top. I think it tastes very good even without the chili sauce. Now instead of you being curious, let's see the preparation steps!.
Ingredients Used
2 cloves of red onion
1 clove of garlic
1 hazelnut
1.5 cm turmeric
2 red chili peppers
2 shallot cloves as fried onion
¼ teaspoon salt
Cooking Procedure
I prepare all the ingredients first and use fresh string beans. Cut the string beans into several pieces.
Boil long beans until half cooked, use the difference water when boiled.
If it is cooked, drain it briefly then wait for it to cool.
Next, split the string beans into two parts, it's easier to cut the top a little with a knife and split.
Prepare fine spices in the form of shallots, 1 piace red chili, garlic, candlenuts and turmeric, then blend until smooth.
Saute the spices with a little oil, then add salt and add red chili pieces.
Then after the seasoning is cooked, add the split long beans.
Stir and cook until the seasoning dries a little, don't forget to correct the taste if the saltiness is not right, add a little more salt.

My jukut bejek is ready to be enjoyed, the combination of medok spices with long beans makes this dish very delicious, I enjoy it with white rice during the day and then stir it with rice. The taste is amazing, savory and very tasty, very suitable for anyone because the seasoning is not spicy.
Well the preparation that I prepared was indeed inspired by the Balinese recipe, but for the similarity of ingredients and spices, not all of them are in accordance with the original recipe, I made this dish in my style, of course, which suits my tongue.
