Unripe plantains combine with beans and vegetables very nutritious

Hello everyone is another day with another recipe I made for someone who is sick and need something nutritious that will help.
Having health challenge is not an easy thing to deal with so I have to help because the family has tried a lot .
I get to know this particular person in the hospital where will were also admitted because of my mother in-law so the doctor recommended that she needs food that is rich with iron and iron helps in bones and is only unripe plantains that I know and that I can provide.

I have to add another thing which is beans, beans is rich in protein combining the two together is not a bad idea so as to enjoy a healthy meal I also add vegetables to my unripe plantains and beans to make it more nutritious.

INGREDIENTS USED
7 piece of Unripe plantains
3 cups of Beans
Salt to taste
1 medium Onion
1/4 cup of Red oil
1 bunch of vegetables
1 tablespoon of dry pepper
Water.

PROCEDURE
I will first select my beans by removing the spoilt ones and the chaff.

I will now put them into my pot add water and cook and I will cook for some minutes I will now bring it down and wash after washing I will also put it back into my pot add water and cook I will cook for a very long time before I will now add another thing.

I will peel my plantains cut them into pieces and add to my beans.

I will now add red oil, salt and my pepper and I will also wash and slice my onions and add.

I will now stir very well.
I will wash and slice my vegetables and add.
