Today I made our local delicacy we call it ONU here in Nigeria and another name for ONU is three leaf yam. This our local food is very sweet and proteinous in nature.
It also has a natural sugar and starch which makes people love it.
My husband loves eating it anything am traveling to my village my husband must ask me to bring it for him. My mother in the other hand must give me three leaf yam to give to my husband because she knows that my husband loves eating it.
This season is the season of harvest and my mother just finished harvesting her three leave yam and we traveled to the village for Christmas my aim is to eat my three leaf yam once I arrive to village, my husband was in a hurry to go back to base my mother now promise my husband that I will bring his own when coming back.
I made this one now for me and my siblings because my mother has the largest three leaf yam farm here in my village.
INGREDIENTS USED
12 piece of three leaf yam
1/2 cup of Red oil
1 medium Onion
4 piece of fresh pepper
Salt to taste
2 tablespoon of NGO
Water.
NGO is our native oil thickener gotten from burnt dry plantain shells it can also gotten from burnt dry palm fruit.
PROCEDURE
I will explain this step by step
STEP 1
Once we got the three leaf yam from the farm I will now remove sand from my three leaf yam body and wash.
STEP 2
After washing I will now put them in my big pot add water and cook. Am using big pot because am cooking for the hole family everybody loves eating it.
STEP 3
This is the process were I will now prepare my sauce.
In a clean plate I will wash my onions and slice.
I will now add salt.
I will now wash my fresh pepper and pound and add and stir.
I will now add my red oil.
I will now add my NGO and stir very well.
This NGO will make my red oil to be thick.
Here my sauce is ready.
STEP 4
This is when I will now check my three leaf yam and see if it is done.
I will now bring them out and allow it to be cool.
STEP 5
I will now peel my three leaf yam.
Here my three leaf yam and sauce is ready.
This three leaf yam looks like yam but is not yam.
This one is proteinous and sweeter than yam I love this food so much and there are so many ways you can prepare your three leaf yam.

Happy New Year! A question: What is NGO?
NGO is an oil thickener gotten from burnt dry plantain peel when you get plantains you peel it dry the peel and burn them you now put them into a clean bowl add water after adding water you now firlt the water that water is NGO you can also make NGO from your palm fruit shells.
It is good that you explain this, especially in the post, because your recipes can be read by people from different parts of the world, who do not know this information; what's more, in the future you could make an NGO recipe, to better understand the procedure. Please edit your post, and include this NGO definition
