Cook plantains with pumpkin leaf sauce very delicious

Happy new year to my great community and all the people on hive I greet you all.

Today I made a very simple breakfast for my kids this morning.

In my country some companies has not open especially bread company so this morning my kids wants to drink tea but there is no bread because bread company has not open for the year.
We look for bread so many places but all to no avail and my kids are very hungry I have to bring an ideal.

We have this ripe plantains in the house and I want to make sauce for the plantains I have to go to my mother's farm and get some vegetables for my sauce and my sauce came out delicious.

I love making food with vegetables for my kids because vegetables has a lot of health benefits like vitamins and other things.
And plantains is rich in iron and carbohydrates too.

INGREDIENTS USED
3 piece of ripe plantains
1 medium Onion
6 piece of Fresh pepper
Salt to taste
1 bunch of Pumpkin leaf (vegetables)
1/2 cup of red oil
Water.

**PROCEDURE **
I will explain my procedure step by step so that everyone will understand.

STEP 1
I will start with plantains.
I will wash my plantains and cut into smaller size.

STEP 2
I will now put my plantains into my pot add water and cook.

I will add a little salt to my plantains.

I will allow my plantains to be done I will bring it down and remove from the pot and allow to get cool while waiting for my plantains to get cool I will switch over to my pumpkin leaf sauce.

PUMPKIN SAUCE
STEP 3
I will wash my pumpkin leaf and slice.

STEP 4
In a clean and dry pot I will put my red oil and allow my red oil to be hot.

STEP 5
Here I will be adding my ingredients
I will first put add salt.

I will now wash my onions and slice I will now add them.

I will now add my slice pumpkin leaf and stir.

I will stir for some minutes before I will now add my washed and pound fresh pepper and stir and add a little water.

Here my pumpkin leaf sauce is ready.

STEP 6
I will now go over to my cooked plantains
I will now peel them because is no longer hot.

This meal was enjoyed by my kids I only eat a little because my kids won't let me eat.
They really enjoyed it and this my first time eating plantains for breakfast and is very good please do well to give it a try I know you will love it.
