Today i would like to share the recipe of a special Rajasthani dish methi ki laungi. This is a great vegan dish. I love to eat this with chapati and bajre ki roti.
This is a traditional Rajasthani recipe made with soaked Fenugreek seeds. Taste sweet , spicy and little bitter . We add many spices , sugar, jaggery & raisins to balance the taste. It is so healthy and delicious too which can be enjoyed with normal chapathi, bajre ki roti, besan roti , parathas , rice, khakhars and also as a pickle.
Methi seeds are very healthy. It improves digestion, decrease cholesterol level in blood and improve heart health.
This is a great recipe, because with taste we consumed healthy food. What else we need ๐.

Ingredients โ
Fenugreek seeds (methi dana) 1 cup
Dry red chilli 3
Raisins 8-10 pieces
Oil 5 tbsp
Salt according to taste
Red chilli powder 2 tbsp
Coriander powder 3 tbsp
Turmeric powder 3 tsp
Dry mango powder 2 tbsp
Hing 1 pinch
Green Fennel
Cumin seeds
Kalonji (black seeds)
Sugar / jaggery 1 cup
Water
Method โ
Step 1 :
Take 1 cup Fenugreek seeds and soaked it for 4-5 hours.
Along with soaked dry chilli and raisins.
Step 2 :
Now drain the water and wash well.
Also remove the water from chilli and raisins. Cut chilli in 2-3 pieces.
Step 3 :
Boil the Fenugreek seeds and red chilli. Red chilli is optional to boil.
Cook for 2-3 whistle . If you soaked for a less time than cook for till 4 whistles. If you don't cook it well seeds become hard and bitter.
Step 4 :
Now keep all masalas ready. Take a bowl, add all spices salt , red chilli powder, turmeric powder, coriander powder, dry mango powder in it. Now add some water and make a paste.
step 5 :
Now take a kadai of wok. Heat oil in it.
When oil become hot add cumin seeds, hing, green fennel, black seeds(kalonji) in it.
Step 6 :
Now add spices paste, dry chilli and raisins in it.
Mix all well and cook for 30 seconds on low flame.
Step 7:
Now add boiled methi seeds in it.
Step 8:
Add 1 bowl sugar. You can also add jaggery rather than sugar. And can add sugar less or more according to your taste.
Step 9:
Mix all well and cook for 7-10 minutes on the low flame. Stirring occasionally.
Step 10:
After 10 minutes laungi will look like. Turn off the flame and transfer your lungi in steel or any other bowl.
Your laungi is ready to enjoy. Enjoy it with roti, rice or whatever you like ๐

U made me to try it...two things....can we use jaggery ? And second can we store it...how long will it remain eatables?
Yes! We can use jaggery instead of sugar...or we can use half sugar and half jaggery. We can store it for 10 days in the refrigerator. One bowl of Fenugreek seeds can be consumed by 4 people for 5-6 days. If we used it as a pickle ๐
