I wanted something with red sauce to signify that it takes courage to eat this dish because it is spicy, but because I can't consume too much spicy food, I will make my own recipe that can arouse my appetite with its distinctive color and not too spicy taste. And I named this recipe spicy sour tofu stew.
Ingredients that I need to prepare
1. White tofu (in my country there is white tofu that is sold per pack with 9 tofu that is slightly small in size and that is what I use in making this recipe.
2. Onions (I use 1 small onion)
3. Shallots (in this recipe use 2-3 cloves of shallots and adjust to the size of the shallots. While the shallots that I use are small)
4. 2 cloves of garlic
5. 2 pieces of red chili
6. 2 pieces of small tomatoes
7. Purut lime leaves are adjusted and the function of these leaves is to make the stir-fried sauce more fragrant and have a light taste
8. ½ tablespoon of salt
9. 1 tablespoon of sweet and spicy chili sauce
10. Dried wood ear mushrooms are adjusted according to size and I only use 1 piece of dried wood ear mushroom because the size is slightly larger.
How to make:
1. The first thing to do is soak the dried wood ear mushrooms until they expand as seen in the picture and after they expand then I cut them a little roughly so that they are not too big
2. Then the next step is I start cleaning the shallots, garlic, red chilies and tomatoes which I then puree
3. After the ingredients are smooth I saute them and I add the kaffir lime leaves so that they smell good then I stir until the ingredients are even and not burnt after boiling I add the white tofu one by one so that it doesn't break, because I don't fry it first
4. After that I put in the wood ear mushrooms that I had cut earlier together with the onions that I had also cleaned and thinly sliced first
5. After all the ingredients are in then I add the sweet and spicy chili sauce and don't forget the salt
6. After that I add 1 glass of water, stir slowly so that all the ingredients are mixed evenly and the tofu doesn't break, let it boil for about 3 minutes on medium heat then correct the taste and after it feels right to your taste turn off the stove
7. The stir-fried tofu is ready to be served.
This thick red sauce is obtained from sauce and tomatoes and finely ground spices. It doesn't taste too spicy because I can't consume spicy anymore due to my digestion which is often disturbed. So the level of spiciness that I want is like this, not too spicy, fragrant from the Purut lime leaves, a little sour from the tomatoes and the sauce that makes me more appetizing to eat it and of course the color also arouses the appetite of people who see it.
