Mashed potatoes with mushroom dish(vegan)

Having leftovers in the kitchen feels great, especially when you need to fix a simple meal. We had leftover potatoes in the kitchen, so I decided to make a very delicious vegan recipe with it, and it turned out really nice. I only needed to buy a few ingredients and add them to the ones we had at home.

Below are the few ingredients I used in making this recipe:

Ingredients

  • Two small-sized potatoes
  • 1 spring onion
  • 1 tablespoon pepper
  • 32 ml palm oil
  • 3 Mushrooms
  • 1 teaspoon nutmeg
  • Small bunch of scent leaves
  • Salt to taste

The making process was very easy for me; I think I saw this recipe online or somewhere (I don't remember), but I decided to try it.

First, I had my onions chopped, then my scent leaves, and mushrooms.

Next, I peeled the potatoes, washed them, and set aside. Then, I added water to a pot and put it to heat, and then I added the potatoes to it to soften. And some salt to taste

I checked with a fork to confirm the potatoes were soft; I then sieved the water and put the potatoes in a bowl. Then, I was mashing it with a spoon...

After properly mashing the potatoes, I added salt, ground nutmeg, and pepper to it and stirred properly.

Next, I put a pot to heat and added oil to it, and then the onions and stirred it.

Then, I added the mushrooms and stirred properly to cook it down a bit. Next, I added half a cup of water to it.

After letting it boil a bit, I added the mashed potatoes to it and stirred very well to mix.

Then, I covered the pot for a few minutes. Then, it was time to add the scent leaves; allow it to cook for some seconds, and the food was ready!

It took me about 30 minutes to prepare this simple recipe, and I got one dish serving from it. To get more servings you have to add more potatoes and other ingredients.

This dish is Delicious, easy, and satisfying - it's a perfect recipe for using up leftover potatoes! With just a few simple ingredients and basic cooking steps. I loved the taste, the color and everything was really appetizing.

I don't know what "scent leaves" taste like, because we don't have those here. But, I love potatoes, mushrooms, onion, and nutmeg, so I'm sure I would like this! Yum! 😋
