Plant-based Sticky rice cake roll with sesame and coconut milk alternative.

The Christmas season is where the happiest memories that I can imagine. Back in my childhood days when it's Christmas all of us were very excited because of the possible presents we might receive from our ninong and ninang (godparents) and the usual carolling that we can get a few pesos of singing a Christmas song to our neighbours but sometimes a nightmare when dogs bark us when we're about to sing so we just skip them and some even rejected us because they don't have money, so what we do is to choose those big houses so for sure we can accumulate some peso and divided it equally after we came home from our carolling.

Moreover, not just those happy moments but also what makes it happier is the food we can eat during Christmas Eve. We were just an average family so every time that festive season came we were the happiest. Colourful and delicious food is served on the table and also the foods we believe that may bring the family a good fortune.

Before we usually buy it from the market but now I'm old enough and have my own family and has a passion for cooking I love making my recipes for ourselves.

I call this recipe sticky rice rolls with a touch of sesame seeds and coconut milk and this is also my entry for the @veganpower competition. This recipe is made from plant-based ingredients and non-dairy products which I used coconut milk as my alternative.

It's good for this festive season because of its attractive colour and sticky textures that most of us believe to give us good fortune moreover, it is much healthier than other food you can buy from the stores so why not make your own.

Here are the ingredients I used

  • 1 cup glutinous rice flour.
  • 1/4 cup all-purpose flour.
  • 3/4 cup sugar.
  • 3/4 cup natural and thick coconut milk.
  • 2 tsp vanilla.
  • a pinch of salt.
  • food colouring.

procedure

  • combined the ingredients and stir until no visible lumps. (except for the food colour and sesame seeds)

while working on the ingredients I already prepared the pots for steaming.

  • divide the mixture into two ( half for the White and half part for the purple.

  • I roasted the sesame seeds after so they will cool down while cooking the recipe.

Steam time.!

  • make sure that in steaming you put your mixture when it's already boiling. Steam first the purple mixture in 10 minutes and add the white mixture and steam for another 10 minutes.

  • Remove from fire and cool down.

  • sprinkle sesame on the ground where you like to roll them. Mine is on a banana leaf.

  • Slice and enjoy!

Although sticky foods are mostly served in new year seasons why not make this soft chewy dessert at Christmas I'm sure your family members would love it too.
