Fudgy Cappuccino-Choc Brownies - Vegan

Rich dense chewy Chocolate Brownies using only plant-based ingredients?

I was skeptical when a friend shared a Fudgy Cappuccino-Choc Brownies recipe and told me it was very much like traditional brownies.
No chocolate, and no full-cream dairy butter?

Even though I'm not vegan, I strongly lean towards the philosophy behind it.

My brother worked for a large broiler producer and told me some horror stories.
Modern farming methods often are cruel, yet they're legal!

Artificial insemination
Crates for mother pigs
Premature separation of mothers and babies
Painful mutilations
Unnatural growth
Overcrowded cages
No food or water for days during live transport
The slaughter process
Animals killed right after birth

I hate to think what else happens behind the scenes!

As all my friends know, I am an incorrigible sweet tooth, and I love chocolates!
Reflux and IBS issues however stop me from overindulging, not that it stops me altogether ;)

I have not tried plant-based chocolates yet as they're not available in all our stores, but I'm sure it may be the solution. Cocoa itself is said to trigger IBS and reflux in some people, but I seem to be one of the lucky ones. Dairy however is a definite no!

Back to Brownies!

When a girl feels like something sweet and chewy, she goes digging in the pantry. Shall I be honest and admit that girl is me?

So, I found Cocoa and immediately thought of my friend's Fudgy Cappuccino-Choc Brownies recipe.
It requires basic pantry staples - flour, cocoa, oil, vanilla essence, brown sugar, and a strong cup of coffee.
Remember, this coffee is not for drinking, it goes into the brownies, pairs excellently with chocolate!

The Recipe
  • 500ml Cake Flour
  • 5ml Baking Powder
  • 100ml Cocoa
  • 2ml Salt
  • 500ml Brown Sugar
  • 250ml Full-roast or Espresso Coffee
  • 5ml Vanilla Essence
  • 125ml Oil
Method

Sift flour, baking powder, cocoa and salt
Add sugar and mix
Add coffee and vanilla, and stir well
Lastly add oil and mix well to incorporate all dry ingredients
Spoon into pan (approx 25cm x 30cm) lined with baking paper
Bake at 180°C for approx 30 minutes
Leave to rest for approx 10 min before cutting into squares/fingers
Remove from pan once brownies are cold

As you can see, my eyes were bigger than my stomach, so I cut them into fingers. These brownies are rich, dense, chewy, and delicious, just like a brownie should be!

What a nice alternative recipe, by the way for the cup of coffee ok one it's for the brownie but If the cook was me there will be a second one for the cook ❤️

These brownies are super delicious! I'm sure they taste just like the non-vegan ones. And yes, chocolate is addictive.

I think it's good that you're aware of everything that goes into the animal farming industry, which is unfortunately very cruel and unethical.
