Hey, now - do I spy some cheating going on? That’s either some really straight, fat macaroni or you slipped in some rigatoni instead (like we always do).
I’ve never yet had a mass-produced vegan cheese that didn’t suck. But unlike most of the complicated recipes I’ve seen (for hard cheese) I feel like I could actually manage to make this!

Okay you got me. Not exactly macaroni although I had it in the cupboard. I just like saying mac n cheese for the purpose of this post haha.
I haven't attempted those hard cheeses, mostly because I never really like them. Even when I ate dairy I hated cheese unless it was melted.
