For this vegan pizza I’ve selected ripe tomatoes, olives, onion, basil and lashings of garlic.
Oh yummy! How terrific is that. All those fresh ingredients. I can almost smell the basil! It is the end of the season here. I wish I could send you some of my basil. It is overgrown like weeds. I may have a few more fresh tomatoes before all is said and done.
Do you ever roast zucchini? I had a bumper crop this year. I roasted it, grilled it, shredded it for frittatas and zucchini bread... and I still have three big ones I need to process. My next adventure is going to be zoodles.
I've never heard the term "lashings of garlic." I'm going to have to look that one up.
Oh, @jayna it’s so wonderful to have a garden brimful of tasty veggies. As for toasted zucchini, YES! I like to do my ratatouille by baking (roasting) everything in the oven until delicious and sublimely juicy. Yummy, I’m doing ratatouille for dinner tomorrow. Thank you 😊
