Waffles 100% vegan using oatmeal

Hello, friends, food lovers, and community! Greetings and Happy Holidays! I hope you are all doing well and enjoying this festive season with your family and loved ones.

Before traveling to India, I prepared many recipes, using up fresh ingredients as I needed to clear out my kitchen. Since arriving in India, I’ve had so much to do that I haven’t had the time to write longer posts.

Today, I just wanted to share that I made waffles for the first time in a vegan version. we make waffles often according to the usual recipes. But this has been my experiment to make vegan, and I was very happy that they turned out very delicious and tasted better than the normal recipe.

The story behind making these waffles starts with some bananas. We traveled to the U.S. right after Diwali, and I had some leftover offering food from the rituals that I put in the freezer. When I was checking the freezer to clean up, I found these two bananas from the offering.

Ingredients:
2 frozen bananas

1/2 cup oatmeal
2 tbsp sugar
1/2 tsp salt
1/4 cup of rice flour
2 tbsp avocado oil
1 cup coconut milk

In a bowl, mash bananas, add rice flour, and sugar.

Grind the oatmeal and make flour, or can use ready-made oatmeal flour.

Pour the oatmeal into the bowl together with mashed bananas, flour and sugar mixture.

Pour 2-3 tbsp any cooking oil

Add coconut milk, and gradually blend the mixture.

Add water if it is required. This batter is a bit thicker than normal waffle batter. because of oatmeal.

Warm waffle maker(waffle iron)

Place sufficient batter on the waffle iron, close it and bake until the waffle turns golden.
