Hello, and greetings all foodies. Indian cuisine has abundant possibilities. We have here many different varieties of food and each family has their own recipes according to available ingredients and season. today I made an easy
healthy sweet dish that is my family recipe. Called TAVSOLI
Ingredients:
1 cucumber ca 400 grams
3/4 cup organic jaggery
4 cardamoms
2 pinches of nutmeg powder
1/2 tsp baking powder
1/4 tsp salt
10 cashews
15 raisins
1 cup semolina
1/4 fresh coconut in slices
Peeled the cucumber and started to grate it.
cucumber is grated
I mixed jaggery in it and kept it aside.
the jaggery dissolves in the cucumber.
Mixing cashews and raisins
Added coconut slices, cardamom powder, nutmeg powder. salt and baking soda.
Added dry roasted semolina to the mixture.
The mixture is ready. Kept it aside for around 10 minutes
Here we have a very small sized oven but it is sufficient. I preheated it to 180C.
The mixture is dry so 1 added 1/2 cup water.
Poured into a baking tray and baked for around 35 minutes at 180C.
After cooling cut into pieces. and now this simple cucumber cake is ready.
I love to learn food from your country. This is very new to me, and must be delicious with the spices and cucumber. I would love to try it. We just don't have good coconut here.

That is the problem there in the west we don't get good coconuts. So I use more yogurt or nuts there in my food. now we have the opportunity to use coconut as much as we can, I don't use oil in vegetables if I use coconut. Thank you very much for stopping by and for your support a hug 💓😊
