Happy new year to you all. Today's post about using powdered sugar and making Christmas cookies this post is for @qurator hive chef theme powdered sugar.
Making homemade powder is very easy.
use sugar less than the desired measure and grind it to powder in a mixer.
I need 125ml or about 1/2/ cup powdered sugar, so I use 100ml granulated sugar and when ground it becomes 125 ml powdered sugar.
Ingredients:
125 ml powdered sugar
125 ml vegan butter
200 ml flour
1/8 of a whole nutmeg grated
1 tsp baking soda
1 tbsp small pieces of cashews
1 tbsp coconut oil that I add extra during the process
2 pinches of salt
Mix butter and powdered sugar together.
Mix it thoroughly until it becomes cream-like in consistency. you can use a hand mixer- I started with a spatula and ended with a hand mixer.
Mix all dried ingredients flour, salt, baking powder, and nutmeg powder.
using a strainer sift them into the butter mixture.
Mix the dry and wet ingredients gradually. In the non-vegan version, it is a correct measure but here I used vegan butter and the dough become quite crumbly so I added 1 tbsp coconut oil and some cashew pieces to the dough.
Here the dough is ready. now shape the cookies with cookie cutters.
Since the dough is very crumbly I use my hand to flatten it.
I made a few different animal shaped cookies.
They are very delicate, so i very carefully shifted them onto a baking tray.
the cookies are ready to go in the oven.
baked them at 175c preheated oven for 15 minutes.
The cookies are baked and we can eat them like this but since they are for Christmas i decorated them with some glaze.
For the glaze, I used ready powdered sugar and lemon juice
1/2 cup powdered sugar
1 1/2 tsp lemon juice
2 pinches of cocoa powder.
1/2 cup powdered sugar and 1.5 tsp lemon juice.
mix gradually lemon juice into sugar.
stir it until get a stiff and smooth glaze
after finishing with the white glaze i added two pinches of cocoa powder. for the hedgehog and snail
I don't want to overdo it so I just made an outline with the glaze.
