My homemade red chili sauce, it is pure, fresh, healthy, and without any chemicals added.

Hello, friends, community, and spicy food lovers. here is something spicy we need for regular use. when we are in India I make most things at home instead of buying readymade from a shop. for example chili sauce red/green, tomato ketchup, soya sauce, mayonnaise, vegan custard powder different spice mixes. I like the freshly available ingredients used as how they are without additives.
They are pure, fresh and healthy.
I ordered some fresh red hot chilis from my regular vegetable vendor who has always very nice fresh vegetables and he is reasonable.
Normally some places those vendors ask for double the price from us because we are living in a foreign country. But he and his sister are very friendly and honest. We like them and sometimes pay them a little extra.
So I got 250 grams of fresh red chilies from him.
I washed them thoroughly then kept them in the sun for a while.
I used 150 grams of these chilies and saved the rest for other recipes
.
Ingredients:
150 grams of fresh red chilies.
6 cloves of garlic
3 tbsp sugar
1/4 cup white vinegar
1 tsp salt
1 tbsp oil
I removed the stems and cut th chilis in appropriate sizes.
poured the oil in a pan.
Put 6 garlic cloves with a little chili and stirred for a few seconds.
Added the rest of the chili pieces and sauteed for 1 minute.
Added 1 cup of water and cooked them until tender.
covered and cooked until the water evaporated.
After all the water dried up i removed in from the heat and waited until the chilies became cool then i added the sugar.
Put in the mixer jar adding salt.
as well as vinegar and turned on the mixer.
Ground them to a fine paste but chili seeds are not easy to grind into fine paste.
I put the paste in the strainer and using the spoon start straining the chili paste.
Here is the fine paste in a skillet.
The house was full of wonderful chili smell.
I just tasted a drop and it was so hot.
I added 1/4 cup more sugar.
Kept stirring and cooked for around 5 minutes.
When it started bubbling I switched off the heat. and kept to cool down.
Once it cooled down i filled a jar.
The sauce was ready
It is about 100 ml. super hot sauce which is enough for our stay here in India..
