Hello dear vegan foodies!
It feels good to be here once more, today I want to share another spectacular recipe that hopefully you'd live so much and might want to try.
Today I'm making sweet potatoes porridge the Nigerian style. This is one of the best ways I love having my potatoes and I'm so happy to share it here.
This recipe requires just a few ingredients and they're listed below:
10 medium size sweet potatoes
1 Bunch of pumpkin leaves
1.5 cooking spoon oil
5 fresh pepper
1 medium size onions
2 pieces of fresh tomatoes
The preparation for this recipe involves peeling the potatoes, chop the onions, tomatoes and pepper. Chop the leaves too.
Next I put water in a pot and put it to boil. Then add the potatoes in it and let it soften.
After a few minutes confirm if the potatoes are soft using a fork, if it's soft enough sieve the water remaining just a little. Then add the palm oil to it
Next add the onions, fresh tomatoes and fresh pepper simultaneously.
Stir and cover the pot for a few minutes to let everything mix well together.
Then add the pumpkin leaves and salt to taste. And cover for a few seconds.
After stir it and next the food is ready. Serve hot in a plate for the family.
I enjoyed this meal so much and so did my kids.
It's a delicacy that is very easy to prepare even with leftover stuffs in the kitchen.
It is also very healthy for the children and for everyone. I hope you can try it.
