I had a while without being able to post here for personal reasons, but thank God I'm back, I think you will be reading me often, this time I bring you a very rich and easy to make recipe, as you can read in the title are some rich ripe plantain arepas stuffed with salad, I think it goes without saying that all members will bring us: potassium, protein, phosphorus, sodium, vitamins C, among other benefits .... Without further ado, let's continue with the post.
INGREDIENTES PARA UNA PERSONA:
2 Platanos medianos maduros.
1 papa pequeña.
1 Zanahoria pequeña.
1 remolacha pequeña.
Sal.
Aceite.
vinagre.
3 hojitas de culantro o cilantro.
INGREDIENTS FOR ONE PERSON:
2 medium ripe bananas.
1 small potato.
1 small carrot.
1 small beet.
Salt.
Oil.
Vinegar.
3 leaves of coriander or cilantro.
Preparación:
Lo primero en hacer es cortar las extremidades del plátano y picar lo a la mitad, seguidamente se toma una olla mediana se le echa agua hasta la mitad y agregamos el plátano, montamos a la cocina, le echamos sal y dejamos cocinar Durante 5 a 8 minutos, también puedes probar introduciendo un cuchillo para saber si los plátanos están listos.

When the plantain is ready, drain the water, remove the peels, place on a plate and mash to a puree consistency.
Now we take a non-stick frying pan or if you do not have a griddle, so that it does not stick we pour oil and with a napkin we spread it all over the frying pan.
Once the mashed plantain is ready and the pan is hot, we fill our hands with oil, take enough mashed plantain, make a ball and then flatten it, give it a round shape and place it in the pan, keep in mind that the fire has to be low, let it cook for 5 minutes on each side. To cook better, place a lid on top of the arepas.
Remove the potatoes, carrots and beets from the pot, peel, chop into cubes, add salt to taste, chopped coriander leaves, a dash of oil, a dash of vinegar and mix everything well.
Finally, take a plate and place the arepas on it. With a table knife, open them in half and fill them with the salad.
