Hello to all my dear friends at @plantpower(vegan). It's a pleasure to greet you and share a new, delicious and nutritious vegan recipe. This is a lentil soup with potatoes and spinach. A succulent and healthy lunch that I am sure you will like.
Yesterday I was at home with my grandson and children, I wanted to make a soup that was nutritious, complete and easy to prepare. I had fresh spinach in the fridge and I had to use all of it before it lost its freshness. I had the lentils soaking since the day before. It was an excellent choice to make a soup and the selected ingredients, the perfect combination that provided flavor, consistency and many nutrients.
The ingredients yielded enough for 5 people. Here is my step by step.
INGREDIENTS
- 400 grams lentils
- 300 grams spinach
- 4 medium potatoes
- 1 onion
- 1/2 red bell pepper
- 6 cloves of garlic
- 200 grams of cilantro
- salt
- olive oil -
1 1/2 liter of water.
PREPARATION
My dear vegan friends, I usually soak the grains for 12 hours before preparation and this was the case of lentils. At the moment of starting the recipe, the first thing I did was to organize the ingredients and utensils to use. Once I had all my ingredients, I washed the lentils very well, poured them into a pot with the water and put them on the stove.
Normally lentils soften quickly, so I proceeded to wash the potatoes, peel them, cut them into pieces and wash them again. I added them to the lentils once they began to boil. Additionally, I added the salt. The next step I took the spinach, separated the leaves from the stems, washed them carefully and put them for two minutes to disinfect with water and vinegar. These I strained and cut a little to add to the pot.
I immediately washed and chopped the paprika and onion and set aside while I crushed the garlic. With all the seasonings ready, I took the frying pan, took it to medium moderate heat and added a splash of oil to sauté them. I added the seasonings, mixed them well and while they were cooking, smells were released that aromatized my kitchen.
Later, I added the sofrito to the pot and mixed. Finally, I added the previously washed and chopped cilantro. I mixed well and let it cook for ten minutes. After the time was over, all the ingredients were well cooked and I adjusted the flavor with a little more salt. I let it rest. **I served a delicious, succulent, nutritious and healthy vegan lunch. Hola a todos mis queridos amigos de @plantpower(vegan). Es un gusto saludarlos y compartir una nueva, deliciosa y nutritiva receta vegana. Se trata de una sopa de lentejas con papas y espinacas. Un suculento y saludable almuerzo que estoy segura les gustará.
Ayer estaba en casa junto a mi nieto e hijos, quise hacer una sopa que fuera nutritiva, completa y fácil de preparar. En la nevera tenía espinacas frescas y había que aprovecharlas todas antes que perdieran su frescura. La lentejas las tenía remojando desde el día anterior. Fué una excelente elección hacer una sopa y los ingredientes seleccionados, la combinación perfecta que aportó sabor, consistencia y muchos nutrientes.
Los ingredientes rindieron para 5 personas. A continuación mi paso a paso.
INGREDIENTES
• 400 gramos lentejas
• 300 gramos espinacas
• 4 papas medianas
• 1 cebolla
• 1/2 pimentón rojo
• 6 dientes de sjo
• 200 gramos de cilantro
• sal
• Aceite de oliva
• 1 1/2 litro de agua.
PREPARACIÓN
Mis queridos amigos veganos acostumbro a remojar los granos durante 12 horas antes de su preparación y este fué el caso de las lentejas. Al momento de comenzar la receta, lo primero fué organizar los ingredientes y utensilios de trabajo a utilizar. Una vez todos mis ingredientes, lavé muy bien las lentejas, las vertí en una olla con el agua y llevé al fuego.
Normalmente las lentejas se ablandan rápidamente, por eso procedí a lavar las papas, pelar, cortar en trozos y volver a lavar. Éstas las agregué junto a las lentejas una vez que comenzó a hervir. Adicionalmente, agregué la sal. El siguiente paso tomé las espinacas, separé las hojas de los tallos, lavé cuidadosamente y puse por dos minutos a desinfectar con agua y vinagre. Estas las colé y corté un poco para agregar a la olla.
Inmediatamente lavé y corté el pimentón, la cebolla y reservé mientras trituraba el ajo. Ya con todos los aliños listos, tomé el sartén, llevé a fuego medio moderado y agregué un chorrito de aceite para sofreírlos. Agregué los aliños, mezclé bien y mientras se cocinaban se desprendieron olores que aromatizaron mi cocina.
Posteriormente, agregué el sofrito a la olla y mezclé. Por último, agregué el cilantro previamente lavado y cortado. Mezclé bien y dejé cocinar por diez minutos. Pasado el tiempo ya todos los ingredientes bien cocidos y ajusté el sabor con un poco más de sal. Dejé reposar. Serví un delicioso, suculento, nutritivo y saludable almuerzo vegano. Mis hijos y nietos quedaron encantados con esta preparación. Reciban un saludo y espero puedan preparar esta receta en casa y compartirla con sus seres queridos.
