Italian Minestrone vegan recipe / Healthy lunch

If you are looking for an alternative to cooking a complete meal and enjoying the goodness of vegetables, you will love this Minestrone.

I love soups because they concentrate all the flavors of their ingredients in one dish. It is a preparation that allows you to combine several foods. Italian cuisine is full of many alternatives to vegetables. I share my recipe for Minestrone. You may think it is a vegetable soup, but Minestrone is a complete dish because it has beans and pasta. It provides the perfect proteins that our body needs.

Most Minestrone recipes add some source of animal protein to flavor the food but believe me it is not necessary since using spices you can obtain meals with delicious flavors.

Ingredients

1 pound of red kidney beans
1/4 cup of pasta (pipe rigate)
1/2 onion
1 carrot
2 stalks of celery
1/2 bell pepper
1 cup pumpkin
10 cloves garlic
2 tablespoons vegetable oil
salt, pepper, oregano to taste

This recipe is for 4 servings.

Soak the beans overnight. Discard the soaking water and wash them well. Place beans in a pot and cover with water. Cook them over medium heat for one hour. You can add 1/2 tablespoon of salt.

While the beans are cooking, wash the vegetables well and cut them into medium-sized cubes (mirepoix).

Place the oil in a frying pan and preheat. Add the garlic and sauté until golden brown. Add all the previously chopped vegetables. Sauté for 5 minutes.

When you observe that the vegetables are a little soft, add them to the cooked beans and adjust the salt. Season them with pepper and dried oregano leaves. Add the pasta, mix well and cook for 10 minutes.

This is a delicious meal full of many colors, it is attractive. Some versions use tomato among their ingredients. If you wish, you can try it, but it will give the Minestrone a slightly sour taste.

I always recommend using small pasta as they will cook at the same time as the vegetables. Cooking the vegetables separately and then adding them to the beans will prevent them from falling apart.
