Hello everyone! I would like to share today the dinner I prepared last night for the family, which I have called vegetable party at home.
After 5 years away from my country Venezuela, I have been able to fulfill my dream of returning to my family. It has not been easy to be away from home during this time, especially for me who had to leave to receive cancer treatment in Cuba and I had to spend the whole illness and my recovery so far away from my family.
Yesterday I really wanted to eat arepa with vegetables, since on the island you can't get pre-cooked flour because it is not their custom to eat arepas.
Then I prepared the flour and added a sofrito of paprika, garlic, onion, scallion and cilantro. I loved the color the dough took on.
For the filling I had chard, spinach, red onion, red cabbage, cilantro and parsley. I chopped them into pieces and sautéed them in a pan with olive oil.
To give it a special touch, as I like it, I made a tomato vinaigrette and mixed the sautéed vegetables to finally fill the arepas.
And so I was able to enjoy my delicious vegetable arepas. The family really enjoyed this version of arepas that I prepared for them.
