So when it rains, my son always asks for snacks after he enjoys his meal. That made me think about what kind of snack menu my son can enjoy.
Finally, with some ingredients available at home, I decided to make Kolak Corn with Sago Pearls. And this snack is perfect to enjoy when it rains.
Kolak Corn with Sago Pearls
The warm sweet sauce relaxes the body when it receives the cold temperature when the rain continues to come. Of course with young corn which contains lots of vitamins, minerals, fiber, and protein. The nutritional content in young corn can also help prevent infection and maintain heart health.
Let's prepare the ingredients we will need.
Ingredients needed:
- 3 pcs young corn
- 4 tbsp pearl sago
- 100 grams of palm sugar
- 3 tbsp white sugar
- 3 pandan leaves
- 1/2 tbsp salt
- 1 grated coconut
- 150 liters of water (to boil the corn) - 100 ml of boiling water (50 ml for blending the coconut and 50 ml for boiling the pearl sago)
Cooking Instructions:
- Peel the corn kernels using a knife to separate the corn from the cob.
- Boil 150 ml of water. After boiling, add the corn and cook until the corn is cooked.
- Add the tied panda leaves.
Finely grind or slice the palm sugar to shorten the melting time.
- After the corn is cooked. Add brown sugar, palm sugar and also 1/2 salt
- Then boil 10 ml of water until boiling, separate 50 ml of water (To blend the coconut)
- After boiling, add the sago pearls into the remaining boiled water and cook until the water reduces.
After the water reduces, turn off the heat and strain to make sure there is no water.
- Then add the grated coconut into the blender along with the 50 water that was boiled earlier.
- After smooth, strain the coconut to separate the coconut cream from the dregs.
- Then add the coconut cream that we squeezed earlier into the boiled corn. (Make sure the corn is cooked)
- Cook until the coconut cream and sago pearls that have been boiled and strained are cooked and boil then turn off.
