Spring, when the sap is running in the maple trees, that's when they are collecting it and making all the maple syrup goodies.

Now that is a true Canadian who knows their syrup lolll. I will check it out next spring then.

Hahaha! If you haven't heard of birch syrup, you might want to try that out. It's very different in terms of taste, closer to black strap molasses in flavour.
