FOODlog #1294: Beetroot & Chicken Meatballs

Made this meal for our staff meal on Sunday. A dish away from our usual meals with rice, I made a white bean stew with meatballs and sourdough bread to dip.

A simple stew with cannellini beans Sautéed with mirepoix and seasoned with cumin and paprika powder, together with some dried oregano.

For the meatballs, I made it using mince chicken and mixed it with onions and beetroot that I sautéed with garlic. Oven baked it for 10 minutes at 220 degrees Celsius and done!

A nice try but I wouldn't make this again as I think the beetroot and it's flavor was unnecessary. Not particularly making the meatballs any better than without it.

The bean stew turned out as expected, hearty and delicious, and paired well with the meatballs and a great dip to the sourdough bread.
