My sous made Nasi Lemak with Sambal Sotong for dinner yesterday. Man was it good!
The rice she makes usually has ginger, fenugreek seeds and santan. It's a seriously good version of Nasi Lemak rice. If you wanna make a traditional Nasi Lemak, just remove the fenugreek and add in Pandan leaves instead.
The sambal Sotong was the best I've ever had. She cooked the squid to perfection! Extremely tender and paired so well with the rice soaking up all the delicious Sambal which was quite mild in spice level so you could really enjoy the flavors of the dish.
The squid was so tender that one of our other staff was asking how does she cook it so well?
