A dish inspired by a Chinese dish popular in Sarawak Kuching called - Mango Duck

This interpretation incorporates some European food making it such a great dish overall.

🥔 Lompe is the pastry for this dish that's made with potatoes and flour. It's soft fluffy and pan fried lightly to get a toasty crisp exterior.

🧄A light layer of Garlic Confit Aioli to add some body to the bite topped with

🔥🦆 a slice of smoked Duck that's blowtorch before serving to give it a slight char, some bits of its skin that is crisped up is sprinkled on top, sweet and vibrant

🥭 mango puree, followed by

🧀 shaved double Gloucester cheese giving it a nutty and funk flavor.

Its garnished with freshly chopped chives and a slice of Pickled Jalapeño to brighten up the dish and tie everything together texturally.
