Coco yam for breakfast 🤔

I have come to realize that cocoyam or taro is one of the best things that I could have eaten for breakfast but was denying myself of this for a while now. It was introduced to me during a trip to Kumasi a few years back and I have enjoyed every bit of eating cocoyam ever since.

A good harvest I must say

You will be amazed at how easy it is to eat cocoyam for breakfast. I place several pieces of cocoyam into boiling water. After removing from the boiling water, I mash the pieces and add butter and salt to add taste to it After mixing these ingredients together, mashing them, I put fried eggs over the mashed pieces or use leftover stew instead.
This is an excellent way to get a full breakfast without feeling stuffed with too much carbs. This plant is also odd tasting for some people though and for some others, it is a much healthier option than potatoes. Cocoyam is very high in fiber, potassium, vitamins and will maintain your level of energy for long hours of working hard in the morning. If you do hands on job which is energy demanding, this could be a great option.

For an entirely different texture and flavor, I have combined coconut milk with cocoyam and cinnamon to make a creamy, delicious porridge.

This dish can also be served on lazy Sunday mornings to enjoy while relaxing, it's Sunday so I might have this for dinner at least, that is if I don't get the Pizza my dad promised. People looking for something other than oats or bread in the morning can easily make a satisfying, affordable and flavorful breakfast using cocoyams. But be sure to cook the cocoyam fully to avoid the itchy feeling you may get eating the uncooked parts of the cocoyam. But besides that, it'll be delicious.
