Roasted munchkin pumpkin with barrel-aged feta, roasted cherry tomatoes and toasted pumpkin seeds is bloody amazing π I wish we had pumpkins in the shops all year-round π I wanted to stuff it (the tiniest pumpkin) but after making the first cut, I could see that was more likely to result in a trip to A&E than a tasty snack and I've had enough of hospitals this year, so opted to cut it into wedges instead. So simple yet so good π€€
Now all I need is someone to tell me what to do with the pomelo (big yellow thing in pic that I'd never even heard of before I saw it in the shop), please and thank you! π
