Wow! It’s been a long day. And it’s probably one of the first times that I’ve had a real sleep in and stayed in my pyjamas til noon in ages. It was so worth it. Tea in bed, catching up on the news (not too much new news other than our regular highlights of the last year), reading some of your blogs, reading a book and then I decided to make pancakes for the family.
I really don’t think I’ve made pancakes since we moved to our cottage. And shockingly we celebrated that first anniversary last weekend. How has a whole year passed? This new life of ours has definite snuck up on us faster than we had thought.
So back to pancakes… I used to make pancakes most weekends so I pretty much eyeball the mixture until it has the right consistency and then chuck it in the pan and they’re each done in under 2 minutes each.
The trick is having enough oil in the mixture and a nonstick pan (and some Spray and Cook non-stick spray - my secret weapon on choice).
So still in my warm gown, I got the fire going in the lounge and pulled out ingredients to get started. My favourite part of making pancakes is that there are just so many options for toppings!!! I’m not the cinnamon sugar type. Pancakes should be a little more decadent and more-ish. The thing is that I don’t love eating fresh bananas. But put them on a pizza or wrap them in a pancake and I’m in heaven!!! Taaaaaaadaaaaaaaa!!!
My pancake recipe is a little vague because as I said I just eyeball the mixture but basically it comes down to these rough amounts.
PANCAKES
2 cups Self raising flour
1.5 cups milk
1/4 cup oil
2 eggs
1/4 cup sugar (can do this sugar free too)
½ tspn cinnamon (also optional)
The mixture should be runny and pourable. If it’s too thick add some more milk. Too wet add a touch more flour.
Mix well so there are no lumps and then prepare your pan. Spray with non-stick cooking spray. Preheat the pan on medium high heat.

Ok I sound so sleepy in the video 😂 and you can see how pourable the mixture is!
Anyway I made a whole stack for the family and then pulled out the TOPPINGS.

My absolute FAVOURITE is maybe a little off to some folk, but I LOVE CREAM CHEESE & HONEY (or golden syrup) on my pancakes. Add the BANANAS and it’s a winning combination.
My family came in and devoured them all. My son opted for the chocolate syrup. My daughter went all in with cream cheese, maple syrup and sliced banana. My husband went savoury with grated Gouda, salami sweet chilli sauce. And my absolute favourite were my very own cream cheese, honey and banana creations.
I always roll them up for easy eating. The folded crepe presentation is just too finicky for me and we just prefer to eat them like a good old Rooti / wrap.
My daughter got a little annoyed at my lazy photography skills so she promptly grabbed my second pancake and proceeded to show me how to take a photo of a pancake and capture the mood and rain at the same time.
On days like this we leave all the healthy eating at the door and indulge in tasty comfort food.
We had a family dinner later so I did eventually get out of my PJs, but on the inside had been wishing I could just hibernate at home on the couch for the rest of the day. It didn’t happen. And now it’s very late and I’m back in my PJs in bed with Max asleep under the covers.

I've made the batter mix with Maple Syrup in the batter (we live near huge maple farms, so finding fresh Maple Syrup is easy enough!)
If I pick fresh blueberries, sometimes I add that to the batter and cook. When I makes it for my family, sometimes I will make a raspberry (I grow them) syrup (raspberries, sugar, heated)Sometimes, I slip chocolate chips in the batter. SO MANY CHOICES
It all sounds amazing!!! Yum! And I love that you’re able to grow it all yourself. I think I should plant some berries but it might be too dry here in Summer. I’ll have to look into it.
So...I woke up today (Sunday) grabbed the phone and the first bloody post I saw was this one. Now I want pancakes for breakfast! Lol.
Although, banana? Nope, can't do it. It'll have to be berries instead.
I like fried eggs and crispy bacon slathered with maple syrup on pancakes sometimes, but usually it's berries, dollup cream or ice cream depending on time of day, and maple syrup (golden syrup at a pinch). So good. Of course pancakes are a sometimes food for me, for obvious reasons. 😊
It's a PJ all day sort of day today here, cold and raining. No pancakes though, smashed avocado on toasted rye topped with poached eggs instead. But I'd love some pancakes.
P.s. The cream cheese concoction you like sounds yum! Also, your accent. So nice.
I’ve just woken up to Sunday and it’s pitch black outside. And now I’m wishing someone else could make me some more pancakes! Alas, I’m off for a hike to see the waterfalls after all the rain we’ve had.
I’m actually not a huge banana fan when it’s fresh but on pizza!!! Yum! Same for pancakes. I also didn’t like Avo for years and now I love it, same for mushrooms. I was a picky child. I still don’t love olives 😳
People's tastes change I guess. I used to eat bananas but now unless it's banana bread of cake I cant do it.
Picky child huh? Some things endure, but life's too short to do [or eat] something you're not interested in or do not like. But...Pizza with no olives is like pancakes with no maple syrup. Just saying.

I agree, one year without pancakes is too long! They look super tasty! I have never put creamcheese on a pancake though.. Here in the netherlands we do have normal cheese on our pancakes, but maybe cream cheese is something to try as well..

Is your pancake recipe vague? Mine only has flour, milk and an egg hahaha. I also make it by eye but here the filling par excellence is "dulce de leche". Or fruit jelly failing that. I would like to try the ingredients you mention, it must be interesting.

Hi! Sorry for the delay. I’m sure you’re recipe works perfectly. I just add a couple extras. I’ve seen a recipe for Dulce de Lech here before! Where are you from? Here in South Africa it’s called Caramel and we can buy it in a can. It’s wonderful!!! But I love using creamed cheese or creamed smooth cottage cheese also works but you have to add honey or syrup. The other option instead of bananas is Cooked apples. So yummy.
These looked delicious. I was impressed by the cinnamon. That's something I've never thought of adding before. Interesting!
On a side note I loved your accent. My brother in law is South African and I could listen to him all day! Hah.
Ha ha! Thanks so much! That’s so funny. I LOVE cinnamon so I add it to most sweet things. I kinda feel like my accent is generic, not Brit, not Aussie, not US, somewhere in-between. 🤪
