Our Weekend In the House by Sam&Andy

Very good morning dear weekend community, once again here Sam & Andy sharing a little of what was our weekend, at home, in which Andy wanted to stand out with a fried rice dish that here in Venezuela is commonly known as Chinese rice, since the Asians in their migration to our country brought with them this special recipe, something so tasty that it did not take not only to be that dish made by our Asian brothers if not that every restaurant had them and which many Venezuelans opted to even set up restaurants of this type of food.

But well, Andy made one of these dishes for the first time and I made it because one of Sam's favorite dishes is Chinese Rice and he had been wanting to eat it for a long time, the fried rice has a very peculiar recipe and somewhat easy to make, but with too much of any ingredient you can easily ruin a dish as tasty as this one.

Ingredients

Rice

You need to have refrigerated white rice, made several hours in advance, if it is from the night before, the better. This is so that the grain is cold and not as fluffy as when it is freshly made.

Meat

Chop the meats into medium-sized cubes. Clean well of any fat and set aside.

The Vegetables

You can use whatever you can find in the fridge. I recommend: carrots, celery, peas, bean sprouts, spring onions and, very important, fresh ginger. Ginger adds a lot of flavor. Don't do without it (unless you don't like it).

The Egg

It is common for Chinese fried rice to have eggs in it. The easiest way is to make a stir fry or omelet in a separate pan and set it aside..

Preparation

The preparation is extremely easy and quick as long as you have all the ingredients chopped beforehand.

Use a wok or a large deep frying pan. Heat it to maximum heat.

Sauté the meats one at a time for no more than 4 minutes. If your stove reaches high temperatures, they will be well cooked in this period of time. Otherwise, cook for a couple of minutes more.

Reserve the proteins in a separate container and start sautéing the vegetables in the same wok.

Then add one by one the carrot, celery, peas, bean sprouts and other vegetables except the spring onion. Add a touch of salt or soy sauce.

Add the previously cooked egg. Add the meats. Mix well.

Add the white rice little by little so that you can manipulate the wok without problems when mixing everything.

Do not stop stirring and check that the salt level is correct.
