Looking good, Victor! Gardening is surprisingly difficult, or more taxing on the back can any place else. I think you're doing pretty good considering that you're digging with a shovel and not using a rototiller. I agree with you and keep my mints in a pot. Over on the Eastern Shore I have meet everywhere because the person before me were Ice-T fanatics. I have been ripping it out ever since 2008. I use a dehydrator on a regular basis and I can tell you that I think they're amazing.
