Ingredients continued:
- 4 cups chicken or seafood stock
- 1 lb mixed seafood (shrimp, mussels, squid) or chicken pieces
- Lemon wedges and parsley for garnish
Instructions:
- Heat oil in a large pan and sauté the onion and bell pepper until soft.
- Add garlic and smoked paprika, followed by the grated tomato. Cook until the tomato reduces.
- Stir in the rice and saffron, coating it with the mixture. Pour in the stock and simmer for 10 minutes.
- Add the seafood or chicken and cook until done, about 10 more minutes.
- Let the paella rest for a few minutes, garnish with parsley, and serve with lemon wedges.
