I have an endless and ever-growing to-do list

It becomes counterproductive. Best way to solve for this is to constantly clear it out

Oftentimes, we add stuff to our lists that are unimportant 2 days later

I do not think so because the more you deal with what's currently on the list, the more there's a need for others. They will keep springing up till you have successfully carried out the plan.

I just keep a basic Evernote doc each day that I update with things I finished from previous day(s) and then current list for the day when I wake up

Importance of prioritized sub-lists. Clearing is good. Sometimes rotating priorities. Maybe have an "upcoming" to further organize too. We all have and find our ways.
