We are going to create a delicious pudim de leite condensado or condensed milk pudding that is not only simple but also foolproof. With the right steps, you can whip up a delightful dessert that your father will surely love.

Ingredients Required

To make this wonderful pudding, you will need the following ingredients:

  • Two boxes of milk (Use the same box used for the sweetened condensed milk, approximately 600 ml)

  • One can of sweetened condensed milk

  • Three eggs

  • Three-quarters of a cup of water (it’s essential to add a little more water to get the right consistency of the caramel)

Creating the Caramel Sauce

Start by melting the sugar over medium-low heat to avoid burning. Stir occasionally to help it melt evenly. It may seem daunting initially, but patience will yield a beautifully golden caramel sauce.

Once the sugar is fully melted, gently add the pre-heated water (to avoid a sudden temperature shock) and allow it to boil and dissolve any remaining sugar lumps. After a few minutes, you'll notice the caramel thickening to the perfect consistency, ready to coat the base of your pudding mold.

Preparing the Pudding Mixture

Now, let’s focus on preparing the pudding itself. You can choose whether you want a creamier pudding or one with a few air bubbles, commonly called "furinhos". For a creamy version, beat the eggs and sweetened condensed milk together until smooth.

Gradually add the milk while mixing gently to avoid incorporating air into the mixture. If you prefer the texture with air bubbles, you can whisk the mixture in a blender instead. However, for this recipe, aim to keep it as smooth as possible.

Straining and Baking

To ensure the mixture remains uniformly smooth, pass it through a fine sieve before pouring it into the pudding mold. Prepare the mold by pouring in the caramel sauce, then gently add your pudding mixture on top.

Cover the mold tightly with aluminum foil and place it into a baking dish filled with water (around three fingers deep) to create a steam bath. Pre-heat your oven to 160 degrees Celsius (320 degrees Fahrenheit) and bake for approximately an hour.

Once baked, remove the pudding from the oven and let it cool at room temperature before transferring it to the refrigerator for an hour. To unmold the pudding, briefly heat the bottom of the mold over a stove to loosen the caramel, and with a gentle push, invert onto a serving plate.
