With so many large corporations owning the lions share of bitcoin and miners, won't they eventually have the power to set the value of it, essentially creating inflation as they please?

The thing is that those people doesn't want to sell Bitcoin anytime soon. They are waiting until the whole thing supply is fully mined.

Yes, but it probably won't be a protocol level change. It'll likely be an inflation of "paper Bitcoin", meaning Swan (for example) will say they have 5,000 when they actually have 4,000. As long as everyone doesn't withdraw, no one will be any the wiser.
