Crafting the Cookie Crust
Crush 25 chocolate wafers in a food processor, then mix with three tablespoons of sugar and five tablespoons of melted butter. Press the mixture into a nine-inch pie plate, carefully pushing edges up to form a sturdy, flavorful crust. Chill and bake at 350°F for ten minutes until firm.
Making the Coffee Custard
In a saucepan, combine ¾ cup sugar, a pinch of salt, and ¼ cup cornstarch. Whisk in 2½ cups of milk and 2 tablespoons of espresso powder. Separately, whisk four egg yolks, then temper into the hot mixture by adding small amounts while whisking continuously.
