Return the browned sausage to the pot along with the chicken stock and the Parmesan rind. Bring this mixture to a boil before reducing the heat to a gentle simmer. Now is the time to stir in the heavy cream if you desire a richer consistency. Allow the soup to simmer for approximately 10 minutes to blend the flavors beautifully.

After the simmering period, toss in the baby spinach, cooking just until it wilts. This should take around 3 minutes. Taste the soup for seasoning, and add more salt and pepper if desired.
- Serve and Garnish
Finally, ladle the soup into bowls and garnish with fresh basil. For an extra touch, consider serving it with a sprinkle of Parmesan cheese on top.
