If fresh berries are your preference, you can certainly use them, but expect to spend additional time draining and reducing excess moisture. The process described here particularly favors frozen berries for optimal clarity and consistency.


Preparing the Berries

To start, defrost the frozen berries thoroughly—preferably for at least 24 hours in the fridge. This slow thawing process ensures even moisture loss and preserves their bright flavor.

Once defrosted, transfer the berries to a food processor. The goal is to puree them into a smooth liquid, but not overprocess to the point of breaking down all texture. During blending, add a small amount of alcohol (such as Grand Marnier, Kahlúa, or Schampo) or another flavoring to enhance taste and act as a sweetening agent.
