- Cool: Be careful not to leave the cake in the oven after turning it off. Remove it promptly and allow it to cool for about 3 minutes.
Assembling the Roulade
Dust with Powdered Sugar: Once cooled slightly, sprinkle powdered sugar over the top to prevent sticking when rolling.
Flip the Roulade: To flip the roulade without causing damage, place another sheet of parchment over the top, and then using a flat surface or cooling rack, gently flip it over.
Remove the Parchment: Carefully peel off the bottom layer of parchment paper, ensuring that the cake remains intact.
Spread the Caramel: Now, evenly spread the caramel across the surface of the cake, leaving a margin on one end which will help you in rolling.
