Milk custard pie with semolina

It's Friday!! And what a better way to start your weekend than this easy dessert that your kids will love!

Ingredients:

For the cream

4 1/4 cups of skimmed milk
1 cup of fine semolina
1 cup of sugar
2 eggs, lightly beaten
1 vanilla stick
1/2 cup of butter

For the syrup

1/2 cup of sugar
1/2 cup of water
1 orange peel

Preparation:

In a heavy pot, on medium heat, warm the milk and add the sugar, the butter and the semolina. Stir with a wooden spoon until it thickens. Turn off the heat. Split the vanilla stick lengthwise into two halves, scrape them, add the seeds into the mix and by stirring, slowly add the egg mixture into the cream. Be careful the eggs won't cook.

Preheat the oven at 170ºC/325ºF/gas 3. In a buttered baking dish, pour in the cream and spread evenly with a spatula. Put the dish into the oven and bake for 45 minutes. Meanwhile, add all the ingredients of the syrup in a pot and stir until it comes to a boil. Let it simmer for 5 minutes. Turn of the heat, stir and remove the orange peel.

Once the cream custard is ready, pour the cool syrup all over and wait for an hour before serving. If you like you can sprinkle some cinnamon over the pie.

I have to say I was surprised about how delicious this pie was. It was creamy, rich and had a very nice flavor. The texture was perfect too. My daughter liked it so much she asked me to make another one the next day.
