Hello everyone. Welcome to my blog. I want to share a zucchini soup and waffle recipe with you. Both of which consist of zucchini dishes that I really enjoy. Zucchini is quite a neutral vegetable on its own. And many people unjustly overlook it. It can actually be used to prepare very delicious meals. I will present you with two different zucchini dish options that you can prepare for your child.

I want to start with the waffles. So if you decide to prepare something from zucchini you can opt for these soft, of course delicious zucchini waffles made with zucchini and cheese.If you don't have a waffle maker you can also make pancakes using the same batter.

Zucchini Waffles

Ingredients:

2 eggs
2-3 zucchinis
200 grams flour
100 grams hard cheese (such as mozzarella)
5 tablespoons yogurt
salt to taste

Instructions:

Grate the zucchinis with their skins using a fine grater. If the skins are tough make sure to clean them thoroughly.

Similarly grate any hard cheese (e.g., mozzarella) finely.

Add a bit of salt and mix in the yogurt. If you don't have yogurt you can use kefir.

Beat the eggs.

Add the flour and mix until a homogeneous consistency is achieved.

Take small portions of the prepared batter and pour them into a preheated waffle maker cooking each portion for five to seven min depending on the machine's power.

Transfer the ready waffles to a plate and serve immediately without letting them cool.

For lunch you can prepare a light soup made with zucchini puree and cream.

Zucchini Soup

Ingredients:

2 zucchinis
1 onion
2 potatoes
1 carrot
1 liter chicken broth (or vegetable broth)
20 grams butter
200 ml cream
Salt - to taste

Instructions:

First prepare the vegetables: 1 large onion, carrot, potatoes, and zucchinis. Chop them into small pieces.

In a thick bottomed pot, melt a piece of butter.

Then add the chopped onion and carrot. Sautéing them over low heat, stirring.

Next add the potatoes and zucchinis, sautéing together. Close the pot and sauté for a few more minutes.

Then add the broth, salt and cover the pot,simmering over low heat.

Blend the cooked vegetables into a puree using a blender.

Return the puree to the pot add the fatfree cream and bring it to a boil.

When serving you can add grated cheese and finely chopped dill or other greens.
