Cheesecake with a Berry Sauce

I wish I could take the credit for this delicious cheesecake (you know cheesecake is my best) but it was delivered to me today by Jack my son. His wife Lesley made it for lunch today and sent some for me - along with a "Boerewors" Roll from their barbecue. She was kind enough to send the recipe as well with photographs and permission to blog about it. Thank you Lesley!!

Here is the RECIPE

For crust:
tennis biscuits
5 tbs of melted butter
vanilla sugar

For filling:
1 tub Philadelphia cheese
150g Greek yoghurt
I Lime
about 350g heavy cream
1 tsp vanilla essence
pinch of salt

Whip everything together and spread on the base

For the raspberry sauce:
cup of frozen berries
half cup water
vanilla sugar
half spoon vanilla essence
Boil and Stir
Add 2 tsp of flour mixed with 2 tbs of water
Stir and add a tbs of butter
Leave to stand

And served:
