My greetings to all coffee lovers of our warm community, usually my posts show you some of the coffee shops I have visited, but today with the consent of all I will talk about the care of the roaster that we use for our small family business, because to enjoy a good coffee requires a lot of work and dedication, ranging from the process in the field planting, harvesting, drying, pulping etc. until the roasting process and then ground.
We always remove the coffee remains and the ashes that accumulate inside the roaster with a brush and clean the external surface with a damp cloth to remove the accumulated dust, we are very careful not to have excess water because it can damage the electrical parts.
Last week the toaster began to work poorly, it emitted a lot of smoke and toasting was ruined, because it overheated, we spent a great scare because the equipment had been damaged implied a serious problem because in the middle of the economic problems we face the parts are not found and if you manage to find some the price can be unaffordable for an average pocket, With this concern in mind, we set ourselves the task of locating a specialist, happily my sister remembered that a friend of ours is a technician in industrial equipment repair and we called him right away to examine the equipment and detect what problems it had, luckily he kindly agreed and was immediately with us.
Luckily the problem was simple, the toaster required a deeper cleaning, this meant disassembling all its parts, the heating elements, cooling fans etc. had to be cleaned, the cleaning had to be very deep to remove all traces of dirt and grease accumulation.
To carry out this process the most usual is to use the industrial products that exist there are several degreasers some of which come in spray and we were told they were very good, but we lacked them and had to resort to less sophisticated products but also very effective, such as vinegar and baking soda, we must recognize that it becomes more difficult and delayed the process requiring more effort, but as we say here in Cuba, When There Is No Bread, You Eat Cassava, to indicate that we must solve the problems with what we have on hand 😅.
The specialist explained to us that the frequency with which we carry out this deep cleaning depends on the use and quality of the bean, he told us that it is recommended that it is done between 100 to 200 kg of roasted coffee.
We learned that for the roaster to work at its best it is important that in addition to the daily care that we must observe in its cleaning, it should not be recharged with too much coffee so as not to affect the roasting and that the temperature should also be regulated according to the variety of the bean, the latter was the cause of the overheating of the resistance.

Mis saludos a todos los amantes del café de nuestra cálida comunidad, generalmente mis post le muestran algunos de las cafeterías que he visitado, pero hoy con la anuencia de todos voy hablarle del cuidado de la tostadora que utilizamos para nuestro pequeño negocio familiar, pues para disfrutar de un buen café se requiere de mucho trabajo y dedicación, que abarca desde el proceso en el campo de siembra, recolección, secado despulpe etc. hasta ya el proceso del tostado y después molida.
Nosotros siempre después de cada tostado le retiramos los restos de café y las cenizas que se acumulan en el interior de la tostadora con un cepillo y limpiamos la superficie externa de con un paño húmedo para retirar el polvo acumulado, tenemos mucho cuidado de que no tenga exceso de agua porque se puede dañar las partes eléctricas.
La pasada semana la tostadora comenzó a trabajar mal, expedía mucho humo y el tostado se arruino, pues se sobrecalentó, pasamos un gran susto pues que el equipo se hubiera dañado implicaba un serio problema ya que en medio los problemas económicos que afrontamos las piezas no se encuentran y si logras hallar alguna el precio puede resultar incosteable para un bolsillo medio, con esta preocupación en la cabeza, nos dimos a la tarea de localizar a un especialista , felizmente mi hermana recordó que un amigo nuestro es técnico en reparación de equipos industriales y lo llamamos enseguida para que examinara el equipo y detectara que problemas tenía, por suerte con mucha amabilidad accedió y enseguida estuvo con nosotros.
Por suerte el problema era sencillo, la tostadora requería de una limpieza más profunda, esto significaba desmontar todas sus piezas, se debían limpiar las resistencias, los ventiladores de enfriamiento etc. la limpieza tenía que ser bien profunda para retirar todos los restos de suciedad y acumulación de grasa.
Para llevar a cabo este proceso lo más usual es utilizar los productos industriales que existen hay diversos desengrasantes algunos de los cuales vienen en spray y nos dijeron eran muy buenos, pero nosotros carecíamos de ellos y tuvimos que recurrir a productos menos sofisticados pero también muy efectivo, como el vinagre y el bicarbonato, debemos de reconocer que se hace más difícil y demorado el proceso requiriendo de mayor esfuerzo, pero como decimos por aquí en Cuba, Cuando No Hay Pan se come Casabe , para indicar que debemos resolver los problemas con lo que tengamos a mano JJJ.
El especialista nos explicó que la frecuencia con que llevemos a cabo está limpieza profunda depende del uso y de la calidad del grano, nos dijo que lo recomendado es que se realice entre los 100 a 200 kg de café tostado.
Aprendimos que para que la tostadora funcione al óptimo es importante que además del cuidado diario que debemos observar en su limpieza, no se debe recargar con demasiado Café para no afectar el tostado y que además se debe regular la temperatura en virtud de la variedad del grano, esto último fue la causa por la cual se nos recalentó la resistencia.
Hasta aquí algunos de los tips para el cuidado de este tipo de equipo, ojalá y si te gusta procesar tu propio café te haya sido de utilidad.
