Yeah, I did also😁 with my elder bro and my neighbors (2 young guys). I don't know why but they always appointed me the mama figure in the play where I use trashed tomato paste cans to make crazy meals 🤣

Growing up in a typical African environment where dad sits in the sitting room and mom in the kitchen preparing meals. I really never liked that setting. I always wondered how romantic it would be seeing dad helping mom in the kitchen, chopping some veggies and opening some cans, to say the least.
I desire to have a really romantic relationship, so I decided to learn how to make some amazing meals.
Knowing my way around mom's kitchen, due to my skills of getting foodstuffs for our play🙃, I tried making small meals whenever mom is away.
Honestly, they were mostly insipid and I discarded them before mom's return, but over the years I have learned a lot of amazing, of which I am posting one here today.
I'll be showing how you can make Plantain Fritata, a nice West African dish many says tastes better than pizza and shawarma. So try making yours and give this post a vote and a reblog if you liked it.
INGREDIENTS
- Maggi (1cube)
- Onion (1 bulb)
- Salt (a pinch)
- Pepper (Chili aka Shogbo)
- Green ball pepper
- Liver/Sausage (as you desire)
- Garlic (2 cloves)
- Ginger a size of a clove of garlic)
- Tumeric (same as ginger)
- Vegetable oil (2 dishing spoon)
- Thyme (a pinch)
- Curry (a pinch)
- Eggs (3)
- Ripe plantain (1-2fingers)
Rule number 1, use low heat to cook all through
Procedures
Cut you plantain in a transverse section (round pattern) and fry with low heat, bring the fried plantain off the fire.
While frying, chop all your vegetables.Put 3 tablespoons of vegetable oil into a pan under low heat. After 30 seconds add your chopped onion, garlic, ginger, tumeric, pepper, and liver/Sausage and stir for 2-3 minutes.
Add your cube of seasoning, a pinch of salt, Thyme and curry and stir the mixture for 3 minutes
Break your eggs and whisk, then add your mixture into the whisked eggs
Add a little vegetable oil to the pan under low heat, after 30 seconds add the mixture into the pan, put your fried plantain on top of the mixture then cover it with a lid for 10-20 minutes.
You can add some chopped chili pepper and green ball pepper to make the meal more colorful.

Some Nutritional Value of one nutrient used in making Plantain Fritata — ONIONS
Onion-bulb is said to have a significant amount of fructans, a type of Fibre that is acted upon by the gut flora. This helps reduce the risk of colon cancer and some other gut conditions. The average amount of Fibre required daily is said to be around 25 grams and a 50gram onion-bulb contains about 0.85g of Fibre.
Onion-bulb is also considered to contain QUERCETIN which have antibacterial properties, especially against stubborn bacteria like Staphylococcus species and Escherichia coli.
