So today I prepared ripe plantain porridge for the very first time in a long time, I usually prefer unripe plantain porridge because I'm not a fan of the sugary taste from the ripe one but I decided to try something different today and it was worth it.
Ingredients
4 fingers of ripe plantain
1 smoked catfish
2 medium sized onions
3 Maggi cubes
2 tablespoon of blended crayfish
1 tablespoon of grounded pepper
A handful of chopped pumpkin leaves
Salt to taste
1 cooking spoon of palm oil
How to prepare
Peel the ripe plantain and cut each into 5 round pieces, slice the onions, wash pumpkin leaves and slice, wash the smoked catfish, remove the unwanted parts of the fish and pieces it as desired, be careful not to peices it too much though.
Put the plantain into a pot, put the fish (smoked catfish are usually hard so it advisable to put it early so it can get done), add water almost at the same level with the plantain and allow it to boil for 5 mins.
Add your onion, seasoning cubes, crayfish, pepper, salt and stir gently to avoid mashing the smoked fish then add palm oil and leave it to cook for another 5 minutes.
Add chopped pumpkin leaves, stir and allow it to simmer on low heat for a minute then turn off heat and our ripe plantain porridge is ready to serve. Super easy isn't it?
